Let’s face it, we all have busy schedules and food prep can be very time consuming. I hear the excuse all the time from my clients that they just don’t have time to prepare healthy choices to take to work. It’s a bunch of Mullarkey:). Make time my friends and you will feel so much better.
Check out my quick and easy tuna salad recipe……
-3 cans of tuna in water (drain the water)
-2 hardboiled eggs (peeled and diced)(remove the yolks if you would like to lower the fat and cholesterol)
-3 tablespoons of sweet relish
-5 tablespoons of spicy or horseradish mustard
-pepper to taste
-Mrs Dash Table Seasoning to taste
-2 stalks of rinsed celery (diced)
Mix all the above ingredients in a large mixing bowl and refrigerate. It makes about 6-8 servings and your prep time is approximately 20 minutes. Voila!!!! No Excuses!
